I got this recipe from The Compassionate Cook by the people from PeTA. Not only do I love them, but the rest of my family does too. They come out just as light and fluffy as any non-vegan pancakes would! You can double up the recipe if you want more and it will not be affected.
Spray a non-stick skillet with non-stick spray. Heat over medium flame. Whisk all ingredients together in mixing bowl until smooth. Pour 1/3 c. of bater into skillet for small pancakes. Flip when they start bubbling or turning brown. Cook other side until brown. Repeat process.
Makes 8-10 small pancakes.
Serves 2 hungry vegans.
