ROASTED CAJUN CHICKEN
Cajun Cooking is fastly becoming one of
the more popular choices in
American Cusine. This recipie brings
all the zest and spice to Chicken By
slow roasting the chicken much of the
fat is cooked out of the skin.
You may want to mix up a larger batch
of the seasoning mix to have it ready
for next
time.
INGREDIENTS
1 medium sized Roasting
chicken (3-5 lbs)
2 carrots
1
onion
2 stalks celery
season
mix
SEASON
MIX:
1 1/4 tsp. garlic
powder
1 tsp salt
1 tsp onion powder
1 tsp dried sweet basil
1/2 tsp paparika
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp oregeno
1/2 tsp cumin
1/8 tsp cayenne
pepper
INSTRUCTIONS

1) Clean out chicken.
2) Fill the cavity with thin strips of
carrots, celery and wedges of
onion.
3) Pull skin back on the
breast and sprinkle 1 tsp of spice mix
under skin
4)Take season mix and
sprinkle generously over the outside of
the chicken and rub it into the
skin.
5) Bake for 3 hrs at 250 F,
basting skin every hour.
