Orzo With Dried Cherries and Almonds

  • 1 Cup Orzo (rice shaped pasta, available in specialty food shops and many supermarkets)
  • 1/4 tspn. crumbled Saffron Threads
  • 2 tspn. freshly grated Orange Zest
  • 2 Tblspn. fresh Orange Juice
  • 3 Tblspn. Olive Oil
  • 1/3 Cup Dried Cherries*
  • 2 Tblspn. slivered Almonds, toasted lightly
  • 1 Scallion, sliced thin diagonally
In a saucepan boil the orzo in 6 cups boiling water with the saffron for 8 minutes, or until it is al dente , drain it, and refresh it under cold water. In a bowl stir together the zest, the orange juice, and salt to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. In a bowl toss the orzo, drained well, with the dressing and stir in the cherries, the almonds and the scallion. Serve the orzo at room temperature.

*Note ~ Dried Cranberries work just as well.
