YORKSHIRE PUDDING
Introduction:
This is a recipe for Yorkshire Pudding that we all
like and it is easy to make when you make a prime rib. I always double the recipe.
Ingredients:
roast drippings or butter,melted
2 large eggs or 3 medium
1 cup sifted flour
1 tsp. salt
1 cup milk
Directions:
Preheat oven to 400*. Pour enough roast drippings
or butter in a 9 x 9 inch pan or muffin tins to
cover bottom. Place in oven to heat. Beat eggs 1 minute. Combine remaining ingredients and beat 1 minute longer. Pour batter in hot pan to 3/4 inch high. If muffin tins are used fill no more than
half full. Bake for 20 minutes; reduce heat to
350* and bake 10-15 minutes longer. If baked in a
flat pan tear the puddig in portions (DO NOT CUT). Arrange around roast and serve with gravy.
Serves: 6-8
Potatoe Pancakes
7 med. potatoes
1 big onion
1 eggs
1 teaspoon salt
1/4 cup of flour
pepper to taste
bacon fat
Peel and grate potatoes.
grate onion and mix with potatoes
toss into food processor or blender
Add beaten egg, salt and pepper
mix on high..Just to blend..Than add flour
beat on high again..until it is a very think
puree.
turn electric frying pan..or skillet on high
add bacon fat..just to cover the botton of pan
turn down..add pancake mixture..I use a small laddle I think it works best..make sure thier
round..about 3"..turn up skillet again..wait til it gets crisp..about 3-5 mins on each side..
keep adding bacon fat as needed..usally after each time..place pancakes on papertowel..lined plates
wait til there all made..than serve with a dollop of cottage cheese on the center or on the side
makes 8-12 pancakes
