Cowboy Oatmeal Cookies

"It's a great cookie, one of the kids favorites."

Ingredients:
1/2 cup vegetable oil
1/2 cup margarine
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 cup butterscotch chips
2 cups sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups quick cooking oats

Directions:
1. Mix oil, margarine and sugar well. Add eggs
and rest of the ingredients a little at a time.
Then add the oatmeal. (This doesn't call for nuts
but I sometimes add about 1/2 cup-chopped).

2. Drop by teaspoon on ungreased sheet. Bake at
350 degrees F (175 degrees C) for 10-12 minutes
or until golden brown.

Makes 3 dozen

Ginger-Oatmeal Cookies

1 cup brown sugar, firmly packed
3/4 cup margarine, softened
1 egg
1/4 cup light molasses
1 teaspoon vanilla
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ginger
2 cups quick-cooking rolled oats
1 cup raisins
1 cup chopped nuts

Heat oven to 350 degrees F. Lightly grease
cookie sheets. In large bowl, beat brown
sugar and margarine until light and fluffy.
Add egg; beat well. Blend in molasses and
vanilla. Lightly spoon flour into measuring
cup; level off. Add flour and remaining
ingredients and mix together well. Drop by
teaspoonfuls onto greased cookie sheet,
about 3 inches apart.

Bake at 350 degrees for 7 to 12 minutes or
until browned. Immediately remove to wire
racks to cool.

Makes about 48 cookies.
