Breakfast Recipe
SWEET MUFFINS
- 1 EGG
- 1/2 CUP MILK
- 1/4 CUP VEGETABLE OIL
- 11/2 CUP ALL-PURPOSE FLOUR
- 1/2 CUP SUGAR
- 2 t BAKING POWDER
- 1/2 t SALT
- 1 CUP STRAWBERRIES OR BLUEBERRIES
(OR OTHER FRUIT)
HEAT OVEN TO 400 DEGREES. GREASE BOTTOM OF 12
MEDIUM BAKING CUPS. BEAT EGG; STIR IN MILK AND
OIL. MIX IN REMAINING INGREDIENTS UNTIL FLOUR
IS MOISTENED. ADD FRUIT. BATTER SHOULD BE
LUMPY. FILL MUFFIN CUPS 2/3 FULL. BAKE 20 TO
25 MINUTES UNTIL GOLDEN BROWN. REMOVE FROM PAN
IMMEDIATELY
Fried Pies
Use canned biscuits. Roll out, fill with fruit,
fold over and seal edges well. Fry in oil. Any
fruit can be used for fried pies.
Dried Apple Filling:
- 2 cups stewed dried apples
- 1/4 cup sugar
- 2 tablespoons melted butter
- 1/4 teaspoon nutmeg, or cloves,
or 1 teaspoon cinnamon
Cook apples, stir in sugar, butter and spice.
Cool.
