*Time Saving Tips*
Here are some time saving tips, I used while I was a single parent. Every Sunday I would do major cooking to save time during the week. I would make homefries, pancakes, french toast,breakfast burrittos, sausage and bacon. That way in the morning when my son wanted a big breakfast I could microwave it and Ta Dah! I also made shepherds pie, chili, spaghetti sauce, soups and stews. You can keep these items in the fridge or freeze it. Remember most cooked foods only have a 7 day shelf life in the fridge.
Breakfast Foods On The Go
Ok. So you want to be the supermom, standing in the doorway in your cape waving goodbye to your family as they all leave for the day. Heres how you too can have food at hand for breakfast if you choose to do all the cooking on one day. You can prepare it all and cook at once.
Preheat your oven to 350 degrees, now you will need 2 cookie sheets, 2 frying pans, 2 mixing bowls along with measuring cups and utensils.
Wash potatoes and cut into bite size peices, place them on a lightly greased cookie sheet. Sprinkle with salt, pepper and a little seasoning salt.
Spray potatoes with a bit of oil and put in the oven. This should take 40 minutes, don't over cook them cause they will be rocks when you microwave them.
*note* I keep a mixture of oil and a touch of water in a spray bottle*
Take your bacon and lay slices side by side on a ungreased cookie sheet. Place in the oven for 20 minutes (*Be sure to check due to some ovens may be different*)When done cooking, remove and cool on paper towel. Keep in fridge wrapped tightly.
Now time for pancakes and french toast. I use the prepackaged pancake mix that all you do is add water. Prepare the mix following the directions on the package (* you make what you think you need, if freezing you may want to make lots*). Heat pan and I think you know the rest. I package mine in Ziplock bags in serving amounts, this makes it easier if your freezing these make sure to freeze them on a tray before placing them in a Freezer bag
French Toast, is one of my household fav's. I do a loaf of bread at a time. If your doing a whole loaf of bread you will need a dozen eggs or more. This is where you must decide how much. Ok you got the eggs cracked, now mix in orange juice (instead of milk) and some cinnamon. If making a loaf of french toast this is the equation 12 eggs, 3/4 - 1 C orange juice, 2 tblsp cinnamon. Brown toast on both sides, be sure to cool completely and the same rule applies to french toast as pancakes when freezing. And you can put it back in the bread bag for easy storage.
Ok so you have it all cooked and its put in the fridge and you ask what about eggs?? Well Eggs take 2 minutes to scramble in the microwave. Make sure to lightly butter or usie cooking spray on the sides of the bowl before you add the eggs and microwave. And about sausage, well heck I buy the precooked ones and they take less than 4 minutes from frozen to table:)
Breakfast Burritto's
These too can be made ahead, but you must cool all ingredients before rolling, Not only is it safer to have all the same temperature ingredients, but condinsation from the eggs makes the tortilla soggy.
- eggs
- dash of milk
- flour tortillas
- shredded cheddar
- salsa
The ratio for this is 1 egg person,2 tblsp cheese per person and 1 tblsp of salsa
Mix eggs and milk, salt and pepper to taste. Cook til done. Spoon scrambled egg along the center of tortilla, top with shredded cheese and salasa. Roll it up and out the door you go! (* if you want to keep these in the fridge be sure to wrap tight with plastic wrap. Microwave time to reheat is 2 minutes* Use caution when pulling back plastic)
McMom's Mc Muffin
Drive thru you say, the only drive thru anyone is doing is through my kitchen. And if they really kick up a fuss, I'll put on a big red nose and wig! And they can Pay ME!..lol
- eggs
- english muffins
- sliced american cheese
Ratio for these is the same as the burritto, 1 egg and slice of cheese per muffin.
Fry egg, place on toasted muffin and add cheese. Its that easy and to think we pay for these! (*same rules apply for making ahead, reheat time1 minute 35 seconds. Caution when removing plastic*)
Breakfast Pizza
Kids today love pizza anyway they can get it, this is fast and my kids love it. Imagine what his teacher thinks we she over hears him telling his classmates he had pizza for breakfast!
- 1 tube of fridge pizza dough
- pizza sauce
- scrambled eggs
- cooked bacon (or sausage)
- shredded cheese
Unwrap pizza dough as per direction and lay onto cookie sheet. Spread pizza sauce over dough, sprinkle eggs, bacon, sausage and whatever topping you want. Sprinkle cheese (cheddar/mozzerella or both) all over. Bake at 350 til brown on top approx.20-30 minutes
Well, I sure hope this solved some of your morning problems. I know a few have saved me through the years. And lets be honest if they don't appreciate your hard work there is always Ceral and Milk..LOL.
And a few more tips before you head on over to Salads, Adding fruit or choclate chip to pancakes makes them extra yummy and you become the Mom of the year ~wink~
