Most people who know me , know I love to cook.
For 10 years the women in my family owned
and worked a little restaurant called The Unicorn Cafe.
We Closed our doors January 1997,
I miss those days and would like
to share some of our recipes with you.

Recipe For Happiness

2 Cups Patience
1 Heart Full of Love
2 Hands Full of Generosity
Dash of Laughter
1 Head Full of Understanding

Sprinkle generously with kindness.Add plenty of faith and mix well
Spread over a period of a lifetime,
and serve generously to everyone you meet :)

Back Bacon and Spring Onion Strata

4oz BackBacon (about 6 slices)
3Green Onions
8 Slices of SourDough or Itlaian Bread
2TBSP Honey or Grain Mustard
1 1/4 C Shredded Old Cheddar Cheese , divided
6 Eggs
1 1/2 C Milk
2 tsp. chopped fresh Thyme (or 1 tsp. dried)
Salt and Pepper to taste

Coarsely chop bacon. Cut green onions into 1 inch pieces.
In Non Stick skillet, brown bacon over med. heat(about 2 minutes)
Add green onions and cook for about 1 minute or until soft
Spread mustard over 4 slices of bread.
Divide bacon and 1 cup of shredded cheese on top of bread.
Top with remaining bread
Cut each in half on the diagonal and arrange in greased baking dish
Whisk together eggs , milk, thyme, salt and pepper
Pour into baking dish, making sure to soak all the bread
Sprinklle with remaining cheese and cover
Refridgerate for up to 2 hours ( or aslong as 24 hours)

Bake in the center of a heated 350 degree oven for 45 -50 minutes

Grand Marnier French Toast

It is best to use day old French Bread or Croissants for this recipe

4 Eggs
1/3 cup fresh Orange Juice
1 Tblsp Grand Marnier
1 tsp. Cinnimon

In mixing bowl mix the above ingredients, whisking well
Dip slices of French Bread of Halved Croissants into mixture
In Hot Skillet Brown on Both Sides and Serve with Warm Syrup

Blueberry Muffins

1 3/4 C All Purpose Flour
1/3 C Sugar
2 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 C Fresh Berries ( or Unthawed frozen berries)
3/4 C Milk
1 Egg
1/3 C Melted Butter(or Margarine)

In large bowl, combine flour,sugar,baking powder and salt
Add milk,egg and butter.
Mix just until dry ingredients are moistened
The batter will be lumpy Do Not Over Beat
Spoon batter into twelve 2 1/2 inch greased muffin cups
Bake @400 degrees for 25 minutes or until tops sprind back

Delicous Homefries

5 Large Potatoes
2 Cloves of Garlic(minced)
1 Small Onion
2 cup of sliced Mushrooms
1 cup diced Green and Red Pepper
Olive Oil

Wash potatoes, and cook them with skins on til soft,let potatoes cool down
In Large Skillet heat olive oil, add garlic, onions, mushrooms and potatoes
Cook 15 minutes at meduim heat
Add peppers and season with salt and pepper

Another Great Thang

Take a Circle of your Favorite Kolbassa and place in a baking dish
Score the top on Diagonal just breaking the skin
Bake in 350 degree oven for 15-20 Minutes

Salads & Dressings

Shrimp and Pasta Salad

Baby Shell Macaroni
1-6oz bag of frozen baby Shrimp
1/4 cup finely chopped Green Pepper
1/4 cup finely chopped Red Pepper
1/4 cup finely chopped Celery Stalk
1/4 cup Mayonaise(or to taste)
1 tsp. Dijon Mustard
Salt & Pepper

In salted boiling water cook 650 gm bag of small shell pasta until tender,
rinse and drain
In a strainer defrost frozen shrimp by rinsing with cold water
Place chopped green & red pepper with celery in bowl
Add well drained pasta,shrimp, veggies and mayo
Add dijon mustard and salt and pepper to taste

Greek Salad

1 Head of Romaine Lettuce
1 Small Red Onion( cut in thin slices and separated)
1 Small Green Pepper(cut in julienne strips)
2 Small Roma Tomatoes(chopped)
1/2 Seedless Cuke (peeled and sliced)
1/4 lb Feta Cheese (crumbled)
Black Olives Optional

Greek Dressing

3/4 cup Olive Oil
1/4 cup Red Wine Vinegar
1 tsp salt
1 tsp. oregano
1 tsp basil
Mix All the above ingredients

In a chilled bowl tear romaine lettuce in bite size pieces
Toss in tomatoes,cukes and green peppers
On top place sliced red onion rings,and crumble Feta Cheese
Stir dressing and pour over generously

Caesar Dressing

1/2 C Olive Oil
3 TBSP. red Wine Vinegar
Fresh juice from 1/2 lemon
Dash Worcestershire sauce
1 Large clove of Garlic Mashed
2 Eggs Coddled**
1 tsp. Dijon Mustard
2 Anchovbies,mashed optional

(Coddle Eggs by first boiling them in their shells for 1 minute)

In the bottom of a wooden salad bowl mash Garlic (and Anchovies)
Stir in Dijon Mustard and Worcestershire Sauce
Whisk in Eggs then Lemon Juice, then Vinegar
Mixing Well...Slowly drizzle in the oil and whisk until smooth

Pour Over Fresh Romaine Lettuce torn into bite size pieces
Adding Bacon Bits, Fresh Ground Pepper and Parmesan Cheese

Raspberry Vinagerette

This dressing taste great on any combination of greens.
Add your favorite vegetables and enjoy!

2 cups of frozen or fresh Raspberries
2 cloves Garlic
1/4 cup Honey
3/4 cup Olive Oil
1/2 cup Balsamic Vinegar

In food processor chop garlic finely
Remove garlic and set aside
Place Raspberries in processor and puree
Leave Raspeberries in processor
add the garlic and remaining ingredients
Blend all ingredients

On The Lighter Side of Thangs

Thyme Ranch Dressing

You can add variaton of Herbs

1/3C Buttermilk
2TBSP Light mayonaise
2tsp. White Vinegar
Pinch of each
Dry Mustard,Dried Thyme, Granulated Sugar.
Salt and Pepper to taste

Whisk together Buttermilk,mayonaise,vinegar
mustard, sugar, salt and pepper
