A Happy Home Recipe

4 Cups of Love
2 Cups of Loyalty
3 Cups Forgiveness
1 Cup of Friendship
5 Heaping Spoons of Hope
2 Heaping Spoons of Tenderness
4 Quarts Faith
1 Barrel Laughter

Blend together well and bake with Sunshine and serve Generously

Basic Pastry
5 Cups of flour
1 lb. lard
1 egg
1 tbsp. vinegar
cold ice water

Cut flour into lard, well
put egg, vinegar into measuring cup
add enough ice water to make one cup
Mix Well before adding to flour mixture
Make a well in the middle of the flour mixture
Pour water/vinergar/egg mixture to flour
Mix with hands til a ball forms

*remember not to overhandle the dough
* roll out on floured surface

Coconut Tart Filling

1/4 c butter melted
2 eggs
3/4c white sugar
1 tsp. vanilla
1 1/2 c coconut
Raspberry Jam
Mix melted butter and eggs stirring in sugar and vanilla.
Add vanilla and stir ,
add coconut and mix till wet.
In bottom of tart shell spoon in 1/4 teaspoon raspberry jam
cover with coconut mixture and bake @350 til brown (15 minutes)

Butter Tart Filling

1/3 c butter melted
1 egg
1/2 c Brown Sugar
1/2 c Corn Syrup
1 tsp. Vanilla

Mix butter and eggs thoroughly , slowly add brown sugar and corn syrup and vanilla.
Add Raisins, nuts, or crushed skor bars and fill empty tart shells
Bake @350 for 15 minutes

Some More Good Thang's

I also use Jello Pudding and Pie Filling to make tarts
Can Cherry Pie Filling as well as other fruits make for easy baking

Chocolate Chip Apple Squares

2 Eggs
1 C Sugar
3/4 C Oil
1/2 C Semi Sweet Chocolate Chips
2 C Flour
1 tsp Cinnimon
1 tsp. Baking Soda
2 tsp. Vanilla
3 C Peeled,Chooped Apples
1/3 C Chopped Nuts

Mix together eggs,sugar, vanilla,oil,chocolate chips,cinnimon, soda
Mix in apples, flour nuts
Spread out batter in a Greased Baking dish and bake @ 350 for 25-40 minutes or until done

Pineapple Squares

Base:
2-1/2 C Grahman wafer crumbs
1/2 C melted Butter
Filling:
1/2 C melted Butter
1-1/2 C Icing Sugar
2 Eggs
Topping:
1-14 oz.Can of Crushed Pineapple
2 Packages Dream Whip

Base:
Mix the ingredients well.
Press into the bottom of 9 X13 pan
Filling:
Beat eggs until creamy.
Add butter and icing sugar
Mix Well and pour over base
Topping
Prepare Dream Whip as per directions on package
Add drained pineapple, mix well and spread over filling
Keep Refriderated

Mexican Wedding Cake

2 C Flour
2 C Sugar
2 tsp. Baking Soda
1-19 oz.Can of Pineapple
2 Eggs Beaten
1 C Crushed Walnuts

Mix flour,sugar and baking soda
Add drained pineapple,eggs and walnuts
Bake @350 for 45 minutes and cool

Cream Cheese Icing

1 Package of Cream Cheese
2 C Icing Sugar
1 tsp. Vanilla
1/2 C Butter

Cream all the above ingredients and frost cake
