Sauces, Marinades and Rubs. Sauces add zip to any plain meal, here I have included easy to make sauces for beef, pork, chicken or fish. Also there are lots of great Marinades, try one if not all to turn a tough of piece of beef into a mouthwatering tender meal. The Rubs you will find are great for adding sing to any meat, their simple and easy to use

Sauces
Quick Sauces for Fish, Chicken or Pork
Creamy Mustard
- 1/3 C lowfat Sour Cream
- 1/4 C salt reduced Chicken Broth
- 1/4 C Creamy Mustard or Dijon
-
1/4 tsp pepper
Combine ingredients and simmer for 1 minute. Add chopped dill to garnish
Garlic Lemon
1/2 C Salt reduced Chicken Broth
1/2 tsp minced Garlic
1/4 tsp Pepper
Combine the above ingredients and simmer for 1-1/2 minute
Remove from heat and stir in 2TBSP Lemon Juice
Add one tsp. low fat margerine and stir til melted
Add capers or or chopped parsely to garnish
Orange Rosemary
3/4 C Orange juice
1/4 C Salt Reduced Chicken Broth
1tsp. Rosemary
Simmer the above ingredients for 1 minute
Stir in peeled Orange sections and cook on low til weel heated
Southwestern Tomatoe
1 can Chili Style tomatoes
3TBSP chopped Cilantro
1/2 tsp Cumin
Simmer above ingredients for 2 minutes
Add shredded cheese and /or Ripe olives
White Wine Herb
1/2 C Dry White Wine
1/3 C Salt reduced Chicken Broth
1/4 tsp Thyme
1/2 tsp pepper
Simmer the above ingredients for 2 minutes
Take off heat and stir in 1 tsp low fat margerine
Add Prosciutto, chopped tomatoes or quarter canned Articoke Hearts
Sweet and Tart Berry
1 C Salt Reduced Chicken Broth
1/4 sliced scallions(green onions)
1/3 C Seedless Raspberry Jam
Simmer above ingredients for 2 minutes
Take off heat and add 1 tsp butter and vinegar
Add Toasted Almonds to garnish
Chinese Pork Sauce
- 1/4 cup ketchup
- 1/4 cup soya sauce
- 2 tblsp brown sugar
- 2 tblsp water
- 1 tsp ground ginger
Combine all ingredients, cover and chill for 24 hours. This an excellent sauce to go with the rub below.
Sweet & Zesty Sauce
- 1 1/2 cup of unsweetened pineapple juice
- 3/4 cup ketchup
- 1/3 cup packed brown sugar
- 1/3 cup cidar vinegar
- 1 tblsp soy sauce
- 1 tsp regular mustard
- 1/8 tsp salt
- 1/4 cup chopped pimiento stuffed olives
In saucepan combine all ingredients but olives. Bring to a boil and reduce heat simmering 30 -35 minutes. Remove and add olives. This is great on Hamburgers and any other kind of meat.
Plum BBQ Sauce
- 1/2 cup chopped onion
- 1 tblsp butter or margrine
- 1- 17 oz. can of whole unpitted purple plums
- 1-6 oz. can of frozen lemonade concentrate (thawed)
- 1/4 cup ketchup
- 2 tblsp soy sauce
- 2 tsp regular mustard
- 1 tsp ground ginger
- 1 tsp worcestershire sauce
In saucepan fry onions in butter or margerine, til tender (not brown). Drain plums reserving juice. Remove and discard the pits, place plums in a food processor put plums and juice, blend til smooth. In saucepan with onions add all other ingredients and add plums from the processor. Bring to a boil and reduce heat simmering for 10 minutes. Great on any BBQ meat, be sure to use only the last 10 minutes of grilling
Honey Mustard Sauce
- 1/3 cup honey
- 3 tablsp Dijon style mustard
- 2 tblsp finely chopped onion
- 2 tablsp apple juice
- 1/8 tsp ground red pepper
In saucepan combine all ingredients, bring to a boil and reduce heat gently boiling for 7-10 minutes. This like most sauces should be brushed on in the last 10 minutes of grilling
Now for a Twist
Tomato Apple Chutney
- 3 medium tomatoes, chopped
- 2 medium cooking apples,cored and chopped
- 1/2 cup sugar
- 1/3 cup vinegar
- 1/4 cup chopped green papper
- 1/4 cup raisins
- 1/4 cup water
- 1 tblsp lime or lemon juice
- 1 tsp ground cinnamon
- 2 cloves garlic minced
- 1/4 tsp salt
In Large saucepan combine all ingredients,Bring to a boil and reduce heat. Cover and simmer for 30 minutes, stirring occasionally. Uncover and cook for 15 minutes more. Cool to rrom temp. and serve warm. Can be stored in air tight container and refridgerated for 7 days
Italian Squash Relish
- 1/2 cup chopped onion
- 1 clove garlic minced
- 2 tblsp olive oil (or cooking oil)
- 2 cups zucchini chopped
- 1- 8oz. can stewed tomatoes
- 1-8oz. can pizza sauce
- 1/4 tsp of each crushed oregano, thyme & rosemary
- salt & pepper
In medium saucepan, cook onions and garlic til tender. Stir in the rest of the ingredients and bring to a boil. Reduce heat and cover and simmer for 10-15 minutes. Uncover and cook 20 minutes more. Serve hot or cold. This too can be kept in the fridge for 7 days.
Apricot, Grape Salsa
- 1 tblsp honey
- 1 tsp cornstarch
- 1/8 tsp nutmeg
- dash of ginger
- 1/2 cup chopped pitted apricots or peaches
- 1/4 cup finely chopped celery
- 3 tblsp orange juice
- 1 tsp lemon juice
- 1/4 tsp dried mint
- 1/2 cup quartered seedless red grapes
In small saucepan stir together honey, cornstarch,nutmeg and ginger. STir in apricots or peaches,celery,orange and lemon juice and mint. Cook and stir till thickened and bubbling. Cook for 2 more minutes. Remove from heat and stir in grapes. Cover and chill til ready to use. This is awsome for turkey and chicken.
Marinades
Marinades are the best way to tenderize meat, it also adds flavour. In most households we have oil whether it be olive, corn or vegetable as well as vinegar. With so many selections of oils and vinegars there is no limit to what your imagination can come up with. I hope to add a section on how to make flavoured oils & vinegars soon. Remember when using marinades its best to allow meat to marinade from 6-24 hours.
Lemon Dill Marindade
- 2 green onions sliced
- 1/4 cup water
- 1/4 cup dry red wine (or red wine vinengar)
- 1/4 cup soya sauce
- 3 tbspn lemon juice
- 2 tablsp cooking oil
- 1 tsp dill weed
- 1 tabsp worcestershire sauce
- 2 clove garlic minced
- 1/4 tsp celery seed
- 1/2 tsp pepper
Combine all ingredients. This is good for steak and roasts whether you grill or bake this is an awsome marinade. If doing flank steak and or blade steak marinade for 6 hours and more if you choose.
Tropical Marinade
- 1/3 cup of thawed orange juice concentrate
- 3 tblsp cooking oil
- 3 tblsp honey
- 1 tblsp sliced green onion
- 2 tsp spicey brown mustard (dijon)
- 1/4 dry mint
- few drop of hot pepper sauce
Mix well, this is great for steaks
Peppered Chuntney Marinade
- 1/2 cup unsweetened pineapple juice
- 1/2 cup steak sauce
- 1/3 cup of orange juice
- 1/4 cup lemon juice
- 1/4 cup worcestershire sauce
- 1 tbsp sugar
- 1 tsp lemom pepper seasoning
Mix well and use for any meat you wish
Red Wine & Peppercorn Marinade
- 2/3 cup dry red wine
- 1/2 cup cooking oil
- 2 tblsp cracked whole black pepper
- 1 tsp dry thyme, crushed
- 2 bay leaves
- 1/4 tsp salt
In a small mixing bowl combine all ingredients. This is great for steaks, cube steaks or roasts.
Lemon Rosemary Marinade
- 1 tsp finely shredded lemon peel
- 1/3 cup lemon juice
- 1/4 cup olive oil (or cooking oil)
- 1/4 cup white wine
- dash of worcestershire sauce
- 1tblsph sugar
- 1 tsp rosemary
1/4 tsp salr
- 1/8 tsp pepper
Mix all ingredients, this marinade is great for Fish
Garlic Basil Marinade
- 2/3 cup white wine vinegar
- 1/3 cup cookin oil
- 2 tablsp sliced green onion
- 1 1/2 tsp dried basil
- 1 tsp sugar
- 2 cloves of garlic minched
Mix all together and use to marinade chicken thighs, legs or pieces
Meat Rubs
Herb Rub
- 4 cloves garlic minced
- 1/2 cup finely chopped onions
- 1-2 tsp dried herbs (mix of thyme,basil, oregano,rosemary)
- 1 tsp salt
- 1/4 tsp pepper
Just combine all ingredients and use to rub onto steak or pork before grilling.
Cajun Rub
- 1 tsp onion powder
- 1/4-1/2 tsp white pepper
- 1/4-1/2 tsp ground red pepper
- 1/4-1/2 tsp black pepper
- 1/4 tsp salt
Combine all, and rub into meat
Chinese Pork Rub
- 2 tblsp sugar
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp turmeric
- 1/4 tsp celery seed
- 1/4 tsp dry mustard
Mix all together, this is great for ribs. I suggest you let the ribs marinade in this rub for 6 -24 hours
