Fiesta Rice Medley

THINGS U NEED!

  • 1 tablespoon veggie oil
  • 1 sm green bell pepper, chopped
  • 1 sm onion, chopped
  • 1 (10oz.) pkg. frozen corn, thawed
  • 1 cup of salsa
  • 1 cup of chicken broth
  • 1 1/2 cups instant rice
  • 3 green bell peppers
  • 3 red peppers
  • 1/4 cup shredded chedder cheese

    Heat oil in a large pot over med. heat. Add chopped bell pepper and onion. Cook until tender but not browned, about 5 min.

    Add corn, salsa,and chicken broth to pot. Bring to boil over med.heat, about 2 min. Remove from heat.

    Stir rice in pot cover. Let stand for 5 min. Slice 1/2 inch tops of whole bell pepper. Remove cores and seeds. Slice a sliver from bottoms to make pepper stand.

    Add Chedder to pot. Fluff rice and cheese with a fork. Spoon into peppers.

    Paprika Skillet Potatoes

    THINGS YOU WILL NEED

    • 4 med. russet potatoes
    • 2 cups of water
    • 1 tablespoon veggie oil
    • 4 green onions sliced
    • 2 cloves garlic minced
    • 1/2 tsp salt
    • 1 tsp paprika
    • Pepper to taste

    Cut potatoes into 1/2 inch cubes, Place in lg. saucepan and cover with water.

    Cook potatoes over med-high heat until tender about 5 min. drain well.

    Heat oil in med nonstick skillet over med. heat. add potatoes,green onion, and garlic. Sprinkle with paprika, salt and pepper.

    Saute' turning occasionally with a spatula until potatoes are golden brown about 10 min. Spoon into serving dish.

    Italian Style Meatloaf

    THINGS YOU WILL NEED

    • 2 tablespoons of veggie oil
    • 1 onion chopped
    • 2 cloves garlic, minced
    • 1 1/2 pds. ground beef
    • 1 pd. mild Italian sausage crumbled
    • 1 cup of bread crumbs
    • 1 egg
    • 1 tsp. salt
    • 1/4 tsp. dried oregano
    • 6 slices of mozz chees
    • 1 cup of pizza sauce

    Preheat oven to 375 Heat oil in a med. skillet over med hight heat. Add onion, and garlic. Cook until tender about 5 min.

    Place beef, sausage, bread crumbs, egg salt and oregano in lg.bowl. Add onion and garlic mix well.

    From half of meat mixture in a loaf pan. Top meat layer with mozz cheese slices cover with remaining meat mixture.

    Top meatloaf with pizza sauce. Bake until cooked through. about 50 min. Let stand 5 min. Pour off any pan drippings before slicing.

    Porterhouse Steaks Verde

    THINGS YOU WILL NEED!!

    • 4 porterhouse steaks 1 1/2 inch thick about 1 pd each.
    • 2 tsps. salt
    • 2 tsps. crushed black peppercorns
    • 2 lg.red onions sliced
    • 1/2 cup red wine or beef broth
    • 3 tablespoons of butter
      SAUCE
    • 1/3 cup olive oil
    • 1/2 cup chopped freash parsley
    • 1 tablespoon minced garlic
    • 1 tsp red pepper flakes
    • 1 tsp salt

    Preheat broiler. Sprinkle steaks with salt and pepper. Layer onion slices in a broiler pan. Pour wine over onions top with butter.

    Place steaks over onions. Broil steaks 5 min per side for rare 8 min per side for med. Remove steaks from pan. Place on a serving platter, cover.

    Stir onions Broil until wine is almost gone and onions are tender. Remove from pan from oven.

    Meanwhile for sauce, whisk oil parsley, garlic,pepper flakes, and salt in small bowl . Serve steaks on a layer over onions top with sauce.

    Oreo Rocket Ship

    WHAT YOU WILL NEED

  • 13 oreo double stuff cookies
  • 1/4 cup canned chocolate or vanilla frosting
  • 1 oreo chocolate cone
  • cinnamon red hots
  • red cake decorator gel
  • 4 sticks of fruit stipe bubble gum
  • blue food coloring

    Stack cookies together, securing with some frosting in between each cookie. Let dry completely.

    Tint remaining frosting with food coloring, spread cone with blue frosting. Press red hots into frosting around open end of cone. Let dry. Write usa on cone with gel.

    Trim ends with gum diagonally, secure with gel around base of rocket. Decorate rocket with red hots.

    Mini Cherry Pastries

    WHAT YOU WILL NEED

    • 12 frozen puff pastry shells
    • 1 (4oz.) pkg. french vanilla instant pudding mix
    • 1 (140z.) can cherry pie filling
    • 1/2 cup whipped topping

    Bake pastry shells according to pkg. directions. Remove to wire rack and cool completely.

    Spoon pudding ito cooled pastry shells.

    Carefully spoon cherry pie filling over pudding. Top each pastry with a heaping tsp. of whipped topping.
