4th of July Poke Cake
Ingredients: 1 package of a 2 layer cake mix
1 package strawberry gelatin and 1 cup boiling water
1 package blueberry gelatin and 1 cup boining water
blueberries and strawberries for garnish
Prepare cake mis as directed on package. Pour batter in 2 round pans 8 or 9x1 1/2". (Do not use pan with removable bottom.) Bake as directed; cool 10 imnutes. Remove from pan, cool completely.
When completely cooled place layers, top side up, back in 2 clean pans; prick each layer with utility fork at 1/2" intervals.
Prepare gelatin - mix one falvor with 1 cup boiling water, stir until gelatin is dissolved. Spoon gelatin over 1 layer. Refrigerate.
Repeat with other gelatin flavor. Refrigerate the cake layers for 3-4 hours.
Next remove layers from pan - do one at a time. Dip into a pan with warm water for 10 seconds; invert on plate, gently shaking to loosen. remove pan; spread layer with 1 cup of the whipped topping. Remove the other as you did for the first layer. Frost with remaining topping. Refrigerate; you can garnish with fresh or thawed, well drained blueberries and strawberries to represent our American flag.
