Mint Chocolate Creams

8 oz of cream cheese
1 cup of heavy cream
1/2 pkg. sugar free white chocolate pudding
3 packets of Splenda
3 tsp peppermint extract

The recipe says to mix it in that order.
Then let it sit for about 10 minutes to thicken and drop onto a cookie
sheet, that has wax paper on
it, by the teaspoon (hefty).
Put in freezer and freeze to enjoy later!
ONE carb each.


Peanut Butter/Chocolate Creams

8 oz of cream cheese

2 Tbsp (no sugar/no salt) peanut butter
1 pkg. of sugar free chocolate pudding mix

Chocolate Covered Pecans

1 ounce unsweetened baking chocolate
2 tablespoons butter
2 tablespoons heavy cream
1/4 teaspoon vanilla
7 packages artificial sweetener
   (add them one at a time and taste - you may not need this many -
   I use a combo of granular AS and liquid to reduce the carbs)
1/2 cup pecan halves
1/2 teaspoon cinnamon (this is the best part!)

Put pecans, 2 pkgs. equal, and cinnamon in a bowl with a lid and shake until
coated.

Melt chocolate and butter, add in cream, vanilla, and the rest of the Equal.
Mix well until smooth. Mix in pecans or dip them one at a time  in the
chocolate mixture, place pecans on wax paper or a plate and chill.

Chocolate Nut Clusters

1/2 oz unsweetened baking chocolate
1/4 cup walnuts -- (or pecans or Almonds)
1 tablespoon butter
2 packages artificial sweetener
2 cupcake papers

Melt chocolate in microwave till melted, add butter and stir till melted and
smooth then the Equal. mix in the nuts and coat all of the nuts. divide into
the 2 papers and put into the freezer for 15 minutes till set eat and enjoy
variation I add a tablespoon of cream after stirring the butter in and is
cooled a little for a like milk chocolate taste. total carbs vary to nut
choice
