Pork Chops Nicoise

1 teaspoon vegetable oil

4 well-trimmed pork loin chops, 1 inch thick

1 minced garlic clove

1 (28-ounce) can tomatoes

1/2 teaspoon each salt and crushed red pepper flakes

1/4 teaspoon freshly ground black pepper

1/4 cup whole Kalamata olives, sliced

In a large nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides 3 to 5 minutes per side. Drain any excess fat. Add garlic and cook 1 minute. Crush tomatoes by squeezing them through your fingers into the skillet. Add salt, red pepper flakes and pepper. Bring to boil, reduce heat to low and simmer, uncovered, 10 minutes. Add olives and simmer, uncovered, 10 to 15 minutes or until chops are done. 30 g protien.; 10 g carb.;2 g fiber
