Puddings & Whips
Not Rice
Pudding (serves 4)
2 cup grated peeled or unpeeled zucchini
2 eggs
1 cup heavy cream
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons Splenda
Squeeze zucchini between paper towels weighted with a heavy
plate, for several hours (Unpeeled zucchini will look less like
rice, but there's no taste difference.) discard paper towels.
Beat together the eggs and cream. Add remaining ingredients. Turn
into buttered 1 1/2 quart casserole dish. Microwave for 10
minutes. Let stand for 20 minutes. Serve warm or cold. For
thicker pudding, mix 1/2 teaspoon xanthan gum with cinnamon,
nutmeg, and splenda, before adding dry ingredients to eggs and
cream. Makes a nice dessert or breakfast.
