Great Sauces for Fish

Note: All Tablespoon measures given = 15 ml
* If you are using the Australian tablespoon, make sure you adjust as 1 Australian tablespoon = 20 ml

From the list below you can tell that I like tangy sauces which tantalize my tastebuds!
For an appetizing finish, garnish with spring onions or chinese parsley/coriander leaves before serving.

Steaming time given is for 500g/1 lb whole fish or fish steak.

Soya Sauce
Orange Sauce
Langkawi Sauce
Sweet n Sour Sauce
Lime/Brown Sugar Sauce
Tom Yam Style Steamed Fish
Teochew Style Steamed Fish
Steamed Fish with Soya Bean
Paste

Soya Sauce

3 Tbsp light soya sauce
8 Tbsp water
1 tsp sugar
1 tsp oyster sauce
1 tsp sesame oil
1/8 tsp dark soya sauce
2 Tbsp garlic oil

1. bring all ingredients to boil and pour over steamed or fried fish.


Orange Sauce

1 tsp vinegar
2 Tbsp plum sauce
4 Tbsp water
1 Tbsp sugar
1/8 tsp salt
1/2 tsp cornflour
1/2 tsp custard powder
juice of 1/2 orange

1. put all in wok and bring to boil together.
2. pour over fried fish or even fried chicken.
(this sauce goes better with fried fish than steamed)


Langkawi Sauce

10 shallots (small onions) - slice thin
coriander leaves - garnish

4 Tbsp water
2 tsp dark soya sauce
1 Tbsp light soya sauce
1 Tbsp fish sauce
1 Tbsp lime juice
1 Tbsp sugar
1/2 tsp salt
1 tsp sesame oil
dash pepper

1. mix well and pour over steamed fish. (no cooking required)
2. garnish with sliced onions and coriander leaves.


Sweet n Sour Sauce

4 Tbsp ketcup
2 Tbsp sugar
2 Tbsp vinegar
1/2 Tbsp light soya sauce
1 cup water

1. mix well and bring to boil.
2. thicken with 1-2 tsp cornflour mixed till smooth with a little water.


Lime/Brown Sugar Sauce

6 cloves garlic - chop
1 Tbsp brown sugar
4 Tbsp lime juice (4 limes)
2 tsp finely sliced tender part of lemon grass (optional)
2 Tbsp + 2 tsp water


1. fry garlic and chillies in oil.
2. add sugar, juice, lemon grass, water.
3. bring to boil and pour over fried fish.
(this sauce goes better with fried fish than steamed)


Tom Yam Style Steamed Fish

1 Tbsp tom yam sauce
1 Tbsp lime juice
1 tsp fish sauce
1 stalk lemon grass - slice tender part
2 pc lemon/lime leaves
2 cloves garlic - slice
few slices ginger

1 tomato - cut wedges

Seasoning:
1/8 tsp salt
1/2 tsp sugar
dash pepper

1. heat wok with 3 Tbsp oil and fry tom yam sauce mixture over low heat.
2. add seasoning and simmer 2 min.
3. pour sauce over fish. arrange tomato wedges around fish. steam 10 min.


Teochew Style Steamed Fish

2 black mushrooms - slice
1 tomato - cut wedge
2 sour plum - mashed
half tofu/taufoo - cut small pieces

seasoning: 1/2 tsp salt
1/4 tsp sugar
1 tsp sesame oil
1/2 tsp chinese wine
8 Tbsp water
1 tsp cornflour
dash pepper

1. pour well-mixed seasoning over fish and steam 10 min.
2. pour 2 Tbsp garlic oil over fish and serve.


Steamed Fish with Black Bean Paste

1 Tbsp black bean paste
1 tsp chopped garlic
few slices ginger

Seasoning:
1/2 tsp salt
1 tsp sugar
1/2 tsp sesame oil
1/2 Tbsp dark soya sauce
4 Tbsp water

Thickening: 1 tsp cornflour mix with 1 Tbsp water

1. heat 4 Tbsp oil in wok.
2. fry garlic, ginger, black bean paste over low heat till fragrant.
3. add in water and seasoning and simmer 2 minutes.
4. thicken with cornflour mixture. pour over fish. steam 10 min.
