8 chicken thighs or 8 drumsticks
Vegetables
1 celery stick
1 bell pepper
1 carrot
3 dried chile peppers
Marinade
2 tablespoons cooking wine
2 tablespoons soy sauce
2 tablespoons cornstarch
2 teaspoons minced garlic
1 teaspoon hot chile sauce
Directions:
1. Cut the chicken inot small pieces.
2. Combine marinade ingredients in a bowl. Add chicken and stir to coat.
3. Take the celery, bell pepper, carrot and dice.
4. Place a wide frying pan over medium heat until hot. Add oil, swirling to coat sides. Add chicken and cook until golden brown on all sides, 2 to 3 minutes per side. Reduce heat to medium-low, over, and cook until meat is no longer pink, 10 to 20 minutes.
5. Add the vegetables and cook for an extra minute or two.
