Yogurt Sauce
1/2 cup plain yogurt
1/2 cup mayonnaise
1/4 cup parsley
1/4 cup watercress
1/4 cup dill
1 clove garlic (minced)
Mix in a blender or food processor until the greens are
finely chopped. Cover and chill thoroughly. Good with
fish, red meat, or simply pour over sliced tomatoes for
a creamy side dish.

Cottage Cheese Sauce
1 cup small-curd cottage cheese
4 tsps. Dijon mustard
1/3 red bell pepper
1/3 green bell pepper
1/2 tsp. chopped chives
Combine all ingredients until well mixed, chill. Good
served over vegetables or fruit.

Cream Cheese Sauce
1 sm. pk. cream cheese (3oz)
1 Tbsp. tomato paste
2 tsps. lemon juice
1/4 tsp. salt
1/8 tsp. black pepper
2 sm. green onions w/tops (chopped fine)
2/3 cup whipping cream (whipped)
Beat the cream cheese, tomato paste, lemon juice, salt
and pepper until blended well. Stir in the onions then
fold in the whipped cream, chill. Great with Seafood.

Mustard Sauce
7 oz Dijon mustard
4 egg yokes
2 cups olive oil
1/3 cup water
1/2 cup parsley (chopped)
1 sm. bunch chives (chopped)
1/2 tsp. sugar
1/3 tsp. salt
2 tsps. worcestershire sauce
Beat the mustard and egg yokes until smooth. Beat in oil
a little at a time then mix until creamy. Mix in the rest
of the ingredients with a spoon, blend well. Give this
sauce several hours for the flavors to blend. Serve at
room temperature.

Sour Cream-Tomato Sauce
1 cup sour cream
1/4 cup mayonnaise
2 Tbsps. tomato paste
2 Tbsps. green bell pepper (grated)
1 Tbsp. red bell pepper (grated)
1/4 tsp. worcestershire sauce
1/8 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. tabasco sauce
Mix all ingredients until well blended, chill thoroughly.
Good with meats and salads.

Sour Cream-Onion Sauce
3/4 cup sour cream
1/2 cup mayonnaise
1/4 cup green onion w/top (minced)
1/4 cup cucumber (grated)
1 Tbsp. sweet pickle (chopped)
1 Tbsp. lemon juice
1/2 tsp. basil
1/2 tsp. salt
1/4 tsp. black pepper
Mix all ingredients until well blended, chill thoroughly.
Good with meats and salads.

Hot Pineapple-Lemon Sauce
1/2 cup sugar
2 Tbsps. cornstarch
1 cup pineapple juice
1/3 cup pineapple (drained and crushed)
2 Tbsps. butter
1/4 cup lemon juice
1/8 tsp. nutmeg
In a saucepan, combine the sugar, cornstarch, salt and
pineapple juice. Stir over med. heat until the sauce is
thick and clear. Remove from heat and mix in remaining
ingredients. Good with un-iced cakes, bread and rice puddings.

Hot Chocolate-Fudge Sauce
1/4 cup cocoa
1 cup sugar
1/2 cup whipping cream
2 Tbsp. light corn syrup
1/4 cup butter
1/4 tsp. salt
1 tsp. vanilla
Combine the cocoa, sugar, cream, syrup, butter and salt
in a heavy saucepan, mix well. Bring to a boil over med.
high heat, boil for 1 min. stirring constantly. Remove
from the heat before adding the vanilla. Great on cakes,
brownies, puddings and ice cream.
