Measuring

Always sift flour or powdered sugar just before spooning lightly into the measuring cup, overfill then level off with a knife or other straight edge.

If brown sugar is lumpy, roll out the lumps with a rolling pin before measuring. Always pack it into the measuring cup.

When measuring any dry ingredients, always overfill the cup or spoon then level off with a straight edge.

With shortening, butter, margarine, or vegetable spread, use a spatula to press it firmly into the measuring cup. to level it off, and to clean it out.

For liquids, use a glass measuring cup with a rim above the 1 cup line and a pouring lip. Fill on a flat, level surface and at eye level.
