Marshmallow Salad
My mom always made this fruit salad for Christmas and Thanksgiving for as long as I can
remember. I really have to confess that I, being the picky type eater, have really not
been a big lover of it. I think that it might be the coconut in it probably because I
really HATE coconut! LOL But my husband LOVES it so I thought that it wouldn't be right
if I didn't include it on my Christmas pages. Everyone I know likes this salad... I am
so picky! LOL
So I called my mom and I asked her for this recipe that I have never ever needed because
I have never made it. When we have family get-togethers, we all bring something and
somehow, I have always been the one making the pies (until recently from scratch) and other
people have brought this salad.
So anyway, to make a long story short (LOL), my mother told me that this salad is not one
that she has been making her whole life as we all previously thought, but it came from her
mother-in-law, who is my father's mother. I had no idea! My grandmother is originally
from Ontario, Canada so I don't have the faintest idea the origine of this recipe.
Oh well, like I said already, EVERYBODY likes it so here it is just for you!
You will need to strain in a large colander:
2 cans mandorine oranges, 284 mL or 10 oz.
1 can crushed pineapple, 540 mL or 19 oz.
Let drain for about an hour.
Add:
1 cup or 250 mL sour cream
**1 cup coconut
2 cups minature marshmallows
Stir well. Keep refrigerated until served.
**I suppose that if you don't
like coconut, you don't need to add it. It's all up to you! HAVE FUN!!
