Sweet Squash

I use this very basic recipe for most types of squash that I cook. I have cooked acorn, butternut, and some other types. Another good way to cook them is cut in half, cleaned out, and wrapped in tinfoil on your barbecue, but most people don't have access to their barbecues in the winter... at least not in Canada! LOL

To cook them you will need:

2 squash
about 6 - 10 dabs of butter/margarine
a handful of brown sugar to sprinkle on top

Peel and cut your squash into cubes or slices that are about a half inch or one centimeter thick. Put them into a large, greased casserole dish with a lid. Put the dabs of butter on top randomly and sprinkle on your brown sugar. Put the lid on the dish and into the oven it goes! I do this when I have the meat pies reheating just before serving. It takes about an hour in a 350 oven, but it gives you lots of time for the last minute things like mashing the potatoes and stirring the gravy. Stir lightly and serve hot. MMMMMM

Save your seeds from inside your sqash, clean them and let them dry completely and save them in ziploc storage bags for planting next spring! Then you don't have to buy them for Christmas dinner next year! LOL
