Mother's Own Carob Fudge

1/4 cup honey

2 cup non-dairy barley malt sweetened carob chips

1/2 cup nut butter (almond)

2 tsp. vanilla

4 Tbsp. soy milk

1 cup coconut (non-sweetened, shredded)

1 cup chopped nuts (pecans)

 

Melt the carob chips, nut butter, milk, honey in a pan over low heat stirring constantly. When all melted turn off heat and add vanilla, cocnut, and nuts. Mix well. Pour into oiled 9 x 9 x 2 dish and chill and serve.
