OVEN-FRIED GARBANZO BEAN PATTIES

Serves 4

4 cups cooked garbanzo beans

1/2 cup bulgur

1 cup boiling water plus water for soaking pita

3 pita breads, torn in pieces (or substitute old bread crusts)

1 Tablespoon olive oil

1 cup chopped onion

3 cloves garlic, minced

1 teaspoon cumin

1/2 tsp crushed red pepper flakes

2 tablespoons lemon juice

1/2 cup chopped parsley

1/4 cup chopped cilantro (or more parsley)

salt and pepper to taste, or not

 

Preheat oven to 375. Mash or food process garbanzo beans and put in large bowl. Place bulgur in small container that has lid. Pour 1 cup boliling water over the bulgur and cover immediately. Let sit for 30 minutes to reconstitute. Place pita pieces in a bowl and cover with water. Soak for 15 minutes; drain and set aside. In skillet over high heat add oil and saute onions, garlic, cumin and pepper flakes 3 minutes or until onions are tender. Combine the beans, bulgur, bread, onion mixture, lemon juice, parsley, cilantro and salt. Stir until well-combined. Using 1/4 cup of the mixture, form into patties and place on a baking sheet. Bake 20 minutes or until crunchy on the outside and heated through. Serve with Sesame Tahini Sauce.

 

SESAME TAHINI SAUCE

1/4 cup tahini

2 tablespoons lemon juice

3 cloves garlic, minced

2 tablespoons soy sauce or Bragg's Aminos

1 to 1 1/2 cups water

1 tablespoon Tabasco or other hot sauce

 

Mix all ingredients well in food processor or blender.

 

*** This sauce is good on anything. Keep some in fridge as a condiment.
