3 1/4 cup cooked pumpkin, mashed smooth
2 cup soy or nut milk
1/4 cup corn starch
1/4 cup honey
1/2 cup dates
1 Tbsp. vanilla
1 Tbsp. coriander ( I would put less)
1 1/2 Tbsp. molasses
Blend all above until smooth. Pour into two unbaked pie shells. Bake at 425 degrees for 15 minutes, then at 250 for 1 1/4 hours. Chill to set. Use your favorite granola for the crust, grind it up, moisten it and press in to your pie dish. Or bake in dish for pudding.
