Lamar's Favorite Hot Yam Soup
2 onions, sliced
2 cloves garlic, crushed
2 stalks celery, chopped
1 cup chopped green beans
2 cups chopped peeled yams (or sweet potatoes OR winter squash)
5 1/2 cups water
1 1/2 cups cooked garbanzo beans (optional)
1 large tomato, chopped
2 Tablespoons soy sauce
1 bay leaf
3 teaspoons paprika
1 1/2 teaspoons tumeric
1 1/2 teaspoons basil
1/8 teaspoon cinnamon
1/8 teaspoon Tabasco (optional)
Place onions, garlic, celery, green beans, and yams in a large soup pot
with 1/2 cup water. Cook over medium heat about 5 minutes. Stir occassionally. Add
remaining ingredients. Bring to a boil, reduce heat, cover and simmer over low heat
for 20 minutes.
If you don't have green beans, try a cup of peas or chopped green pepper.
