STUFFED GRILLED CHICKEN

*******TAKE 4 BONELESS CHICKEN BREASTS and marinate overnight in locarb french dressing or Ranch Dressing. I do this by taking a large ziplock bag and adding 1/2 cup of dressing and the chicken to the bag. Easy cleanup. Remove chicken in the morning and discard the marinade. Split along thickest side to form a pocket.

(If you would rather not marinate you can rub each breast with olive oil and seasonings of choice...can be just plain salt and pepper or other flavorings. I like poultry seasoning or lemon pepper) *******TAKE 4 SLICES OF CHEESE and insert into each pocket... *******ADD 4 SLICES OF PRECOOKED AND DRAINED CANADIAN BACON and stuff ontop of the cheese. ********THEN ADD MUSHROOMS AND ONION SLICES IF DESIRED. *********Either tie with cooking string or insert toothpicks into flaps to hold shut. Grill chicken until done being careful to keep pockets together when turning.
