So far Rand has been seen as the person who will fufill all those prophecies. He's the Car'a'carn, he's the Dragon Reborn, he's the Coramoor, and so on. I say, why is Rand always the one prophecies are on? After all, there are two other Ta'veren mucking about around there. Everyone, here and in the WoT universe, just assumes that Rand is to fufill all these prophicies. But Mat has fufilled all of the needs for being the Coramoor.
Mat has Aiel serving him (Aviendha), Aes Sedai serving him (Elayne and Nynaeve and the rest), and the Sea Folk serving him (Renaile and her "merry" band). However, all this is a side note. Kind of like the Dragon being Aiel by birth. It's interesting and fufills a prophecy, but it doesn't mean much to most people in Randland.
The most important piece of evidence is that Mat found the Bowl of the Winds! They may not have needed it, but he found it and got it for them considering they would have died by the Gholem's hands if not for Mat and his Foxhead Medallion. The Coramoor must have something to do with the bowl. This is shown in ACoS when, after Elayne describes the Bowl, one of the Sea Folk said (rough quote) "The Bowl of the Winds! It must be! That means the Coramoor--". Well, Rand had nothing to do with that. He doesn't even know about the Bowl of the Winds! Thus, how can he be shown as having taken any part in the finding or using of it? He can't. Mat can. Thus Mat is the Coramoor.
