Pecan Pumpkin Dessert
Ok so this one isn't the most simple to prepare
but, once eaten your guest's will think you spent all day.
I especially make this for the holidays, Sooo good!!
~INGREDIENTS~
2 cans 15oz each canned pumpkin
1 12oz can of evaporated milk
1 cup sugar, 3 eggs, 1 tsp.vanilla
1 18 1/4 oz boxed yellow cake mix
1 cup melted butter/margarine
1 1/2 cups chopped pecans
~FROSTING~
1 8oz.cream cheese softened
1 1/2 cups powdered sugar
1 tsp.vanilla, 1 12oz frozen whipped topping

Line a 13x9x2 baking pan with wax paper and coat the
paper with non-stick spray; set aside. In a mixing bowl
combine pumpkin,milk and sugar. Beat in eggs
and vanilla. Pour into prepared pan.Sprinkle with dry cake mix,
and drizzle with butter. Sprinkle with pecans. Bake
at 350 for 1 hour or until golden brown.
Cool completely. Invert onto a large serving platter
carefully remove wax paper. In mixing bowl,beat cream cheese
powdered sugar and vanilla until smooth. Fold into
whipped topping. Frost dessert. Store in refrigerator.
