Melt 1/4 cup butter in skillet until sizzling.
Add chicken. Cook over medium/high heat, turning
once,for 12-15 minutes or until browned and fork
tender.Remove chicken from pan then put
zucchini,mushrooms and onion in and sautee
until desired tenderness. Add chicken
back to pan
and keep warm.
In seperate pan melt 2 TBS. of butter
until sizzling, add garlic for about a minute
add flour;cook for 1 minute until smooth and bubbly
Add next 3 ingredients. Cook stirring occasionally,for 5-7
minutes until smooth and thickened.
Serve over rice or noodles. (I prefer rice)
You may easily add more zucchini or mushrooms.
I was not a big zucchini eater but this is MARVELOUS!!!
It is so YUMMY. You may also
add more garlic for a stronger taste.
