This is a bouquet of the herbs both Flemish (Dutch Speaking) and Walloon (French speaking) Belgians use frequently in their cooking--Bay, Chervil, Cinnamon, Nutmeg, Parsley, Shallots, Thyme and Vanilla-- and are essential in defining their cuisine. Belgian Endive, Brussels Sprouts, Eel Pie, Chervil Soup, Buckwheat Pancakes, Belgian Waffles, Chocolate, Blood Sausage Boudins Noirs, Gin Pecquet, Plum Brandy Quetsch, Stew Waterzooi, Beef Carbonnades, Steamed Mussels with Belgian Fries les moules-frites (the national dish) and Beer (over 300 varieties) can be found on most tables from the local inn kroeg to the Palace in Brussels.
Belgian life is a very civilized life, as befits a country with a magnificent past of crusader castles, cathedrals and painters, and a splendid present as a sophisticated international community. From the farthest points of Belgium, fresh vegetables, cheeses, fish and game reach the capitol central open air market, by rail or road in less than four hours, and find their way to the many wonderful restaurants.
During its complicated and agitated 2,000 year history the Belgae (the first recorded inhabitats, probably Celts) were invaded by Romans, Vikings, Franks, Burgundy, Spain, Austria, France, Germany and the Netherlands, finally becoming a nation in 1830. Favorite cooking techniques, ingredients, and styles of the invaders were picked up by the natives, who by the Middle Ages, had developed a cuisine they could call their own. Belgians are fond of saying that their food is cooked with French finesse--and served in portions of German generosity.
