This is a bouquet of the herbs Cubans use frequently in their cooking--Bay Leaf, Cumin, Garlic, Oregano, Parsley, Saffron, Scallions and Vanilla. Also are Cassava Casabe, Sweet Potato, Sour Orange Naranja Agria and tropical fruit--Lime, Lemon, Mango, Papaya, Plantains and Guava Sofrito. Black Beans and Rice, Yuca, Green Olives, Coffee Café, Rum, Daiquiri and Pineapple Pudding Habanero can be found on their tables from Beach Hut to Presidential Palace. The Spanish brought Bay, Cumin, Garlic, Parsley and Saffron to mix with native Allspice, Annatto (Bijol powder), Chili Pepper, Green Pepper, and Vanilla. Cubans also use Cinnamon, Nutmeg, Pepper, Cilantro/Coriander, Onion, Paprika, Cachucha Peppers, Saffron, Scallions, Spearmint and Sweet Pepper.|
