This is a bouquet of the herbs the French use most frequently in their cooking--Chervil, Chives, Marjoram, Parsley, Savory, Shallots, Tarragon and Thyme--and are essential in defining their cuisine. Special herb mixtures, Fines Herbes, Bouquet Garni and Herbes de Provençe, are added to salad, soup and stew. Quiches, Omelets, Crepes, Pate, Seafood, Wine and Sauces can be found on most tables, from a sidewalk Café in Provençe to the Presidential Palace.
