Hungarian Garden

HungarianBqR2-S - Original Print       This is a bouquet of the herbs Hungarians use most frequently in their cooking: Bay, Caraway, Dill, Garlic, Marjoram, Paprika, Parsley and Vanilla are essential in defining their cuisine. They like a sour or semisour taste--achieved by adding sour cream, vinegar, yogurt, horseradish or sauerkraut--to contrast with their often spicy, fatty foods. Soups and stews are the very heart of their cuisine. They have perfected four classic stews--gulyas, porkolt, paprikas and tokany. Liptquer Cheese, Hungarian Goose Liver, Sour Cream, Csipetke Noodle bits, Fogas and Paprika can be found on most tables from the csarda, or country inn, to the palace in Budapest. Celery, Chives, Cloves, Cinnamon, Green Pepper, Leeks, Mustard, Onion, Pepper, Poppy, Scallions, Tarragon and Thyme would complete their herb garden.

      Because of its position between East and West, Hungary has frequently been overrun and invaded, and the occupiers have left indelible marks on their cuisine. Their ancestors, the Magyars, lived near the Ural Mountains as hunters and fishermen around the time that Christ was born. They led a nomadic existence, and in 896 a.d. seven tribes conquered their new homeland and brought with them cabbage, vine leaves stuffed with meat and bogracs-style cooking of the hot spicy stew Gulyas.

      In the 1400's King Matthias married Queen Beatrice d'Este, an Italian princess who introduced onions, garlic, figs, turkeys and cheese. The Turkish invasion in 1526 enriched the cuisine with paprika, rice pilafs, pitah (filo dough which was transformed into retes strudel), marc (a honeyed drink), tomatoes, sour cherries, corn and coffee.
