This is a bouquet of the herbs Hungarians use most frequently in their cooking: Bay, Caraway, Dill, Garlic, Marjoram, Paprika, Parsley and Vanilla are essential in defining their cuisine. They like a sour or semisour taste--achieved by adding sour cream, vinegar, yogurt, horseradish or sauerkraut--to contrast with their often spicy, fatty foods. Soups and stews are the very heart of their cuisine. They have perfected four classic stews--gulyas, porkolt, paprikas and tokany. Liptquer Cheese, Hungarian Goose Liver, Sour Cream, Csipetke Noodle bits, Fogas and Paprika can be found on most tables from the csarda, or country inn, to the palace in Budapest. Celery, Chives, Cloves, Cinnamon, Green Pepper, Leeks, Mustard, Onion, Pepper, Poppy, Scallions, Tarragon and Thyme would complete their herb garden.|
