Japanese Garden

JapanBq18 - Original Print       This is a bouquet of the herbs the Japanese use frequently in their cooking--Basil, Chrysanthemum, Ginger, Mitsuba, Perilla, Sansho, Scallions and Sesame. Rice, Fish, Green Tea, Kelp, Soybean Paste Miso, Custard Soybean Cake Tofu, Soy Sauce, White Radish Daikon, Rice Wine Sake, Green Horseradish Wasibi, Bamboo Shoots and Gingko Nuts can be found on most Japanese tables, from the simple home to the Imperial Palace. Chili Pepper, Daikon, Garlic, Green Pepper, Mustard, Kelp and Nori Seaweed, Onion, Parsley, Pepper, Shallots, Wasibi and Watercress would complete their herb garden.

      While Japan's earliest settlers came from Siberia and Korea, China had a strong influence from the 6th-8th centuries, introducing Buddhism and refinements to all areas, including cuisine. Early European trade began with the Dutch and Portuguese in the 16th century, and Tempura, a variation on a Portuguese favorite, was born. Only after the 1850's, when Japan opened Her borders to the West, was meat added to the diet.

      The essence of Japanese cuisine is its closeness to nature, making the most of fresh natural seasonal foods, with culinary artistry its keynote. The art of garnishing reminds one that every piece of fish or meat presented on a plate began its life in the open. They express a joy of life and the beauty of all things natural.
