Portuguese Garden

Portuguese Bouquet: Etchings and Nature Prints. See larger image below.       This is a bouquet of the herbs the Portuguese use frequently in their cooking--Bay, Chili Pepper, Cinnamon, Coriander, Garlic, Parsley, Paprika and Pepper--and which are essential in defining their cuisine. Olives both black and green, Olive Oil, Port Wine, Piripiri, Acorda Soup, Fava Beans, Bacalhau and fish of all kinds, Flan, Almonds, Caldo Verde, Country Bread (Pćo) and Clams can be found on most of their tables, from the Cafe (Tasca) to the Presidential Palace. Celery, Chives, Cloves, Cumin, Green Pepper, Leeks, Mustard, Nutmeg, Onion, Oregano, Shallots, Spearmint, Thyme, Vanilla and Watercress would complete their herb garden.

      Portugal is the land of explorers and of the explorer's kitchen. Lured overseas by the ocean that lapped its southern and western shores, for a century and a half (1410-1560) Portugal dominated commerce and acquired great wealth launching Europe's Age of Discovery. Under the leadership of Henry the Navigator, her brave explorers pushed the edges of the known world.

      Motivated by a desire to secure routes of trade to India and the Far East, each voyage reached out further and further from their tiny land. Vasco da Gama's ships brought precious spices--curry, cinnamon, cloves, nutmeg and pepper from the East. And as the overseas empire expanded, the other exotics from the East(among them rice and tea), from Africa (coffee, broad beans and peanuts), and from the New World (pineapples, peppers both sweet and hot, tomatoes and potatoes) found their way into local kettles.

      The original Iberians, believed to have come from Africa, were superceded through the centuries by waves of other tribes and cultures.   Celts, Phoenicians, Greeks, Carthaginians, Romans, Visigoths, Muslims, Spaniards, Flemings, French, Germans, English and finally Americans have all been attracted to this land of wonderful sea coasts. The effect of this contact with other lands and cultures is, of course, noticeable in its cuisine, which shows the ingenious blending of Old and New World foods and herbs, changing forever the palate of the country.
