Swedish Garden

SwedishBqR2-S - Original Print       This is a bouquet of the herbs Swedes use frequently in their cooking--Bay, Cardamom, Cinnamon, Cloves, Dill, Mustard, Parsley and Pepper--and which are essential in defining their cuisine. Smoked Baltic Herring, Gravlax, Fontina Cheese, Pancakes with Lingonberries, Glogg, Swedish Meatballs, Sima and Aquavit can be found on most Smorgasbords, and, if it's Thursday night, Split Pea Soup, the national dish. Allspice, Celery, Chives, Garlic, Ginger, Horseradish, Onion and Vanilla would complete their herb garden.

      The Swedes are the wealthiest, the most powerful and most worldly of all the Scandinavians. They have lived in watery geographical isolation from the rest of Europe for at least 5,000 years. The Vikings very early learned to smoke, dry and salt their fish and meats giving them the wherewithal for their extensive sea journeys. While they have been influenced by their German neighbors and their many French chefs, Swedish cooking has maintained the natural taste that soil, climate, mountain and lake have produced.
