Welsh Garden

WelshBq - Original Print       This is a bouquet of the herbs the Welsh use frequently in their cooking--Mustard, Cinnamon, Garlic, Ginger, Leeks, Nutmeg, Sage and Thyme--and are essential in defining their cuisine. Speckled Bread Bara Brith, Flummery, Welsh Rarebit, Soup or Stew Cawl, Laverbread, Oats, Bacon, Cabbage, Leeks, Porridge, Buttermilk, Lamb, Sea and River Fish, Mead, Tea, Beer, Bakestone Cakes, Herring and Rice Pudding can be found on their table, from the moorlands cottage to the capital in Cardiff. Bay, Allspice, Celery, Chives, Cloves, Mace, Marjoram, Nettles, Spearmint, Watercress, Onion, Parsley, Pepper, Rosemary, Savory, Shallots, Sorrel and Vanilla would complete their garden.

      In the 1st Century AD Celtic clans fought against Roman invaders. By 5 AD Anglo-Saxon invaders had driven them to the mountains, where they developed a distinct nationality. After 200 years of war, rule was taken by England from the House of Gwynedd in 1282. The character of Wales' cuisine is determined to a very great extent by its natural products. Oats, the main cereal crop, and bacon are augmented by garden vegetables, root crops and dairy products, with mountain lamb, salted beef, freshwater and sea fish, poultry and the mysterious laverbread supplying much of the protein.

      While the addition of pies, cakes and griddle scones came with the Industrial Revolution, most traditional dishes, the broths, bakestone cookery, porridges and yeast-baked bread evolved from the ancient Celtic styles. In spite of all the outside influences, the Welsh have kept their independence of spirit and their deep national traditions, with a language, culture and cuisine distinctly their own.
