Puddings |
Summers in San Carlos can be hot, and a hot
oven heats the kitchen, so I tend to do most of my indoor cooking in the
microwave. (Summers in Minnesota were hot too when I was growing up, but we didn't have microwaves back then.) |

Vanilla Cream Pudding |

When I make Vanilla Pudding, I start with an old Betty Crocker recipe and make adaptations. |

cup dry milk powder tablespoons cornstarch cups sugar tsp. salt cups water egg yolks, slightly beaten tsp. butter tsp. vanilla |
Nido, the brand of Mexican powdered milk, works quite well in this recipe. | ||
Mix sugar, powdered milk, cornstach, and salt in a 1 quart glass measuring pitcher. Add the water and stir well. Cook in microwave 4 minutes or so until the mixture thicken and boils. Stir every few minutes. Cook 1 minute longer. In the meantime, best the egg yolks in a small bowl or picture (2 cup size). Gradually stir at least half of hot mixture into egg yolks. Then blend into the hot mixture in the quart pitcher. Boil one minute. Stir. Blend in butter and vanilla. Pour into dessert dishes. Serve warm or cool with ream of whipped cream. | Of course, this can be used for
making a cream pie. Just pour into a baked pie shell. Then you can use
the egg whites for a meringue topping using your favorite meringue
recipe. You can make it thinner and use as a sauce over fruit or cake. It also makes a nice filling between layers of cake. |

Chocolate Cream Pudding |

Essentially, I use the recipe for vanilla pudding above except that I add 1/3 cup cocoa powder with the dry ingredients in the beginning. | You can also use 2 sq. unsweetened chocolate instead of cocoa |
Butterscotch Pudding |
||
Once again, I adapt the recipe for vanilla pudding above. Increase the sugar to 1/2 cup of brown sugar, packed. With the vanilla, I add 1/4-1/2 teaspoon butterscotch flavoring and some butter flavoring. |
Note: | On occasion, when I've made the chocolate version, I've forgotten the butter and vanilla, or even forgotten the egg yolks. The pudding is still good. | |
Coconut Cream Pudding

Add sweetened shredded coconut and some coconut flavoring with the butter and vanilla in the vanilla cream pudding. | |
Pecan Cream Pudding
|
Add pecans to the butterscotch pudding before pouring into dessert dishes. | |
Raisin Rum Cream Pudding |
Add raisins which have been softened in warm water, and rum flavoring with the butter and vanilla in the vanilla cream pudding. | |

Make your own version of pudding based on what is on special sale in the grocery store or what you have ripening in the garden. |

So, now instead of 3 or 4 or more recipes to keep track of, you can reduce it to one basic recipe. After you've made it a few times, you don't need the instructions anymore either. Now print that list of ingredients for Baked Custard, cut as small as possible, and tape inside your kitchen cupboard door. You only need to open the door of the cupboard to start making dessert. |
