The recipes below are ones that I think you would enjoy. They remind me of autumn, when the leaves start to change color and the air is a little cooler. Baking weather! The recipes have that "homemade" goodness to them. I have made them several times and every time I do, they taste just as good as the first time. You might want to bring one or both of these to your family, friends or neighbors. My suggestion is to spread lots of "butta" on the corn and sweet pumpkin breads. Brew some coffee or tea and ENJOY!
1 1/4 pound red-skinned sweet potatos (yams)
4 large eggs
1 1/2 cups buttermilk
2 1/3 cups yellow corn meal
1 cup all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1/4 teaspoon ground ginger
1/2 cup (1 stick) melted butter
Preheat oven to 375 degrees
Butter a 9x9x2 pan
Pierce sweet potatos in several places - microwave on high until tender - turning once - approximately 12 minutes. Cut open and cool. Mash enough to make 1 cup. Put 1 cup mashed potatos in large mixing bowl. Whisk in eggs and buttermilk.
Blend in cornmeal and the other ingredients, then add the melted butter. Mix well until it resembles coarse meal mixture.
Pour into pan and bake approximately 45 minutes - or keep checking center until knife comes out clean.
Let it cool awhile.
Give one of the breads to a family member, friend or neighbor as a gesture of love.
2 cups pumpkin puree
3 eggs
1 cup vegetable oil
3 cups flour
3 cups sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped walnuts
Heat oven to 350 degrees - grease and flour two 8 1/2 x 4 1/2 inch loaf pans
In a small bowl combine pumpkin puree, eggs and vegetable oil
In a large bowl, combine flour, sugar, cinnamon, nutmeg, salt, baking soda, baking powder and cloves
Add pumpkin mixture and walnuts to dry ingredients
Stir until just combined
Spoon into prepared pans
Bake 1 hour until deep golden brown and a wooden toothpick inserted in center comes out clean
Cool completely.
The Italian Love Cake recipe I received from a relative. It's very good! Mama Mia!
1 box chocolate cake mix (prepared according to the package instructions)
2 pounds ricotta cheese
4 eggs
1/2 cup sugar
1 teaspoon vanilla
Mix together ricotta cheese, eggs, sugar and vanilla.
Set them aside.
Prepare cake mix and pour into 9 by 13 inch pan.
Spread ricotta cheese mixture over the top of the unbaked cake.
Bake at 325 degrees for 1 (one) hour and 15 minutes, or until cake tests done.
After baking, the cheese will fall to the bottom of the cake.
TOPPING:
1 small box of instant chocolate pudding
1 cup of milk
10 ounces non-dairy whipped topping
Mix all topping ingredients together and spread over top of cake.
