Try this asparagus recipe for the Passover / Pesach festival. Asparagus is one of the vegetables that are Kosher for Passover. The following asparagus recipe is also a vegan recipe, since it contains no ingredients that are derived from animals or animal by-products, including fish and poultry. There are many vegan recipes, and from an ingredient point-of-view, one just has to watch that the recipe ingredients are free of animal products and animal by-products. The following roast asparagus recipe is also healthy for you!

Whole Roast Asparagus Recipe

1 pound fresh asparagus of medium thickness and uniform size, trimmed and peeled, if necessary
2 - 3 tablespoons olive oil
Salt and freshly ground pepper
2 tablespoons fresh lemon juice
1 tablespoon orange juice

Instructions for the Whole Roast Asparagus recipe:

  1. Place the asparagus in a single layer in a large nonstick skillet and drizzle with 1 tablespoon of olive oil.
  2. Shake the pan to coat the asparagus with the oil and place over medium heat.
  3. Cook the asparagus, shaking the pan every few minutes to brown evenly.
  4. Lower the heat and continue cooking until asparagus is tender, about 10 to 15 minutes (time may vary, depending on size of asparagus).
  5. Test by poking asparagus stems with a toothpick or knife.
  6. Season with salt and pepper to taste.
  7. Drizzle with 1 to 2 tablespoons of olive oil.
  8. Combine the lemon juice and orange juice and sprinkle over the asparagus.
  9. Serve immediately.
