The following brownie recipe for the Passover / Pesach festival is great for the kids! Many brownie recipes exist, but the following recipe for brownies is adapted for the Passover / Pesach festival by substituting matzo cake meal for flour.

Passover Brownies Recipe

1 1/4 cups sugar
6 tablespoons cocoa
1/2 cup vegetable oil or melted butter
4 eggs
1/2 cup matzo cake meal
1/2 cup chopped toasted walnuts

Glaze for the brownies:

6 oz. semisweet chocolate
1/3 cup butter or margarine

Instructions for the Passover Brownies recipe:

  1. Blend sugar and cocoa.
  2. Whisk together oil or butter, sugar-cocoa mixture and eggs. Do not overbeat.
  3. Fold in cake meal and nuts.
  4. Pour into 8-by-8-inch (20.32-centimeter-by-20.32 centimeter) baking dish.
  5. Bake in preheated 350 degrees Fahrenheit (180 degrees Celsius or Centigrade) oven for 25 minutes. Do not overbake.
  6. Cool.

Instructions for the Glaze recipe:

  1. Melt chocolate gently with butter or margarine until smooth.
  2. Pour over brownie base.
  3. Refrigerate.
  4. Cut into squares.

Makes 20 to 25 brownies.
