Try this cake recipe for the Passover / Pesach festival (or Jewish Passover): a banana-date Passover Seder cake. A recipe for cake can come in a plethora of ingredient combinations in different recipes for the Passover / Pesach festival, but the following cake recipe offers a simple, yet tasty conclusion to any Passover Seder meal.

Banana-Date Seder Cake Recipe

7 eggs, separated
1 1/3 cups sugar
1 teaspoon grated orange rind
3 tablespoons lemon juice
1 cup mashed banana
1 teaspoon salt
1 cup matzo cake meal
1 cup ground almonds

Filling:

2 cups sliced dates
3/4 cup cherry wine
Dash of salt
1 tablespoon lemon juice

Glaze:

1/2 cup cherry wine
Dash of salt
1 tablespoon lemon juice

Glaze:

1/2 cup cherry wine
1/2 cup water
1 tablespoon potato flour
2 tablespoons sugar

Instructions for the Banana-Date Seder Cake recipe:

  1. Beat yolks until thick and yellow in color.
  2. Gradually beat in sugar, rind and lemon juice.
  3. Stir in banana, salt, cake meal and almonds.
  4. Beat egg whites until stiff but not dry. Fold into batter.
  5. Bake in ungreased tube pan at 350 degrees Fahrenheit (180 degrees Celsius or Centigrade) for 45 minutes or until done.
  6. When cool, cut cake into two layers.

Filling:

  1. Combine ingredients and cook 4 to 5 minutes, stirring, until thick.
  2. Spread between the layers of cake.

Glaze:

  1. Combine ingredients and cook, stirring, until thickened and clear.
  2. Spoon over top of cake.

Serves 15 to 20.
