Here is a carrot salad recipe for the Passover / Pesach festival. The following carrot salad recipe creates an Israeli-style carrot salad. It is one of the vegan recipes we offer on this website in that it contains no animal or animal by-product ingredients, including fish and poultry.

Israeli Carrot Salad Recipe

2 cloves garlic
8 sprigs (1/2 bunch) fresh parsley, stems removed
1 pound carrots, peeled
2 tablespoons lemon juice
2 tablespoons orange juice
4 tablespoons extra virgin olive oil
1/2 teaspoon salt
Several grinds of pepper

Instructions for the Israeli Carrot Salad recipe:

  1. Place the garlic and the parsley in the bowl of a food processor equipped with a steel blade, and chop or julienne.
  2. Add the carrots, lemon juice, orange juice, oil, and salt and pepper.
  3. Pulse until the carrots are well chopped but not puréed.
  4. Adjust the seasonings and serve.

Serves 6.

Note: If you want to garnish this salad, you can add orange slices and/or radish slices.

In wintertime, add grated or julienned celery root with the carrots.
