A chicken breast recipe for the Passover / Pesach festival adds a healthy aspect to any Jewish Passover meal. Passover / Pesach foods that avoid high fat are not plentiful, but a recipe for chicken breast that watches what ingredients are included will only serve to benefit both you and your guests. There are many recipes for chicken breast, but the following chicken breast recipe considers your health and adds matzo farfel stuffing to adjust to the Kosher for Passover dietary laws for the Passover / Pesach festival.

Chicken Breast Recipe With Farfel Stuffing

4 whole (8 ounces each, or 226.8 grams each) chicken breasts
Paprika
Peanut oil
2 cups matzo farfel, available in supermarket kosher section
1 teaspoon peanut oil
3 medium button mushrooms, chopped
1/2 medium onion, peeled and diced
2 stalks celery, diced
1 egg
Salt and pepper

Instructions for the Chicken Breast recipe With Farfel Stuffing:

Prepare chicken:

  1. Remove breast cartilage and rib cage, leaving wing joint. This will form a pocket for the stuffing. If desired, remove skin.
  2. Rub with paprika and peanut oil.

Prepare farfel stuffing:

Note: Be sure to use farfel - little pellets of matzo - not matzo meal.

  1. Soak farfel in water until soft.
  2. Drain, squeeze dry and set aside in a colander.
  1. Heat peanut oil and sauté onions, mushrooms and celery until soft.
  2. Add egg and sautéed ingredients.
  3. Mix well; add salt and pepper to taste.
  4. Tuck into cavity of chicken breast.
  5. Place in baking dish with chicken on top and bake at 350 degrees Fahrenheit (180 degrees Celsius or Centigrade) for 20 minutes to 30 minutes, until juices run clear and stuffing is golden brown.

Serves 4.
