The following recipe for chocolate chip cookies substitutes matzah meal for flour to conform to the dietary laws for the Passover / Pesach festival.

Passover Chocolate Chip Cookies Recipe

1 1/4 cups Passover brown sugar
1/2 cup white sugar
2 tablespoons Passover vanilla sugar
1 cup unsalted butter (or unsalted Passover margarine)
2 eggs
1/4 teaspoon salt
1/2 cup matzah meal
1/2 cup cake meal
1 cup potato starch
2 cups chocolate chips

Instructions for the Passover Chocolate Chip Cookies recipe:

  1. Cream brown sugar, white sugar, vanilla sugar with butter.
  2. Blend in eggs.
  3. Stir in salt, matzah meal, cake meal, potato starch and chocolate.
  4. Chill dough for an hour or overnight (Freezes well).
  5. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius or Centigrade).
  6. Line a couple of baking sheets with parchment paper.
  7. Scoop large tablespoonfuls of dough onto sheet - leave room for spreading.
  8. For smaller cookies, use a generous teaspoonful of dough.
  9. Bake until done, 14 to 16 minutes.
  10. Let sit on baking sheet to cool and set up.
  11. Use a metal spatula to remove.
  12. Chill cookies before packing/handling or serving.

Makes 4 to 5 dozen chocolate chip cookies.

Variations:

Pecan Sandies: Omit chocolate chips and replace with chopped pecans. Use only brown sugar, no white sugar.

Passover Blondies: Lightly grease a 9-by-13-inch (22.86 centimeter by 33.02 centimeter) pan (for thin squares) or an 8-by-11-inch (20.32 centimeter by 27.94 centimeter) brownie pan (for thick and chewy squares). Press cookie batter into pan. Bake at 350 degrees Fahrenheit (180 degrees Celsius or Centigrade) for 25 to 35 minutes.
