Try the following fish salad recipe for the Passover / Pesach festival that is low cholesterol as well as low fat. Fish salad recipes abound for Sephardim (Jews whose ancestors came from Spain and/or Portugal) and Mizrahim (Jews whose ancestors came from the Middle East and Asia in general). The following fish salad recipe adds a healthy aspect to any Passover / Pesach Seder.

Low-Fat, Low-Cholesterol Mediterranean Marinated Fish Salad Recipe

1 pound (0.45 kilograms) halibut (or any other firm-fleshed white fish)
3 bell peppers (red, green and yellow), chopped coarsely
1 large onion, chopped
1 cup chopped parsley
1 cucumber, peeled, seeded and chopped
1 teaspoon salt (or to taste)
Ground pepper to taste
1 clove garlic, chopped finely
1 cup olive oil
1 cup white wine
1 teaspoon oregano
teaspoon dried basil
2 cups fresh lemon juice
Parsley sprigs, for garnish

Instructions for the Low-Fat, Low-Cholesterol Mediterranean Marinated Fish Salad recipe:

  1. Cut the fillets into 1-inch (2.54 centimeter) cubes.
  2. Place the prepared fish in a glass bowl.
  3. Add the peppers, onion, parsley, cucumber, garlic, salt and pepper.
  4. Combine the rest of the ingredients for the marinade.
  5. Pour these over the fish and vegetable mixture.
  6. Marinate several hours or overnight.
  7. To serve, scoop the salad into the prepared artichokes.
  8. Spoon some of the marinade over the salad and artichoke.
  9. Garnish with a sprig of fresh parsley.
