Matzo Meal Pancakes Recipe (Low-Fat)

1 cup matzo meal
1 teaspoon salt
1 cup egg substitute such as Egg Beaters
1 cup club soda
3 egg whites
Canola oil, for frying

Instructions for the Matzo Meal Pancakes recipe:

  1. In a medium bowl, mix together the matzo meal, salt, egg substitute and club soda.
  2. Let mixture rest in the refrigerator for 30 minutes.
  3. In a clean bowl, beat egg whites until stiff peaks form.
  4. Fold the egg whites into the matzo meal mixture.
  5. Heat oil in a frying pan. When hot, drop the pancake batter by the spoonful into the pan.
  6. Brown lightly on both sides.
  7. Serve with jam or applesauce.
