No-Cholesterol Passover Look-alike Oatmeal Cookies Recipe

1/2 cup raisins
1/3 cup safflower oil
1/2 cup egg substitute (equivalent to 2 eggs)
1 cup matzoh meal
3/4 cup sugar
1/2 teaspoon cinnamon
1 cup matzoh farfel
1/2 cup chopped nuts

Instructions for the No-Cholesterol Passover Look-alike Oatmeal Cookies recipe:

  1. Place the raisins in a small saucepan.
  2. Cover with water.
  3. Simmer until the raisins are plump and tender.
  4. Drain thoroughly.
  5. Set aside until needed.
  6. In a large bowl, beat egg substitute with oil.
  7. In a medium bowl, combine matzoh meal, sugar and cinnamon.
  8. Blend well.
  9. Combine with the beaten egg mixture.
  10. Add remaining ingredients.
  11. Place rounded teaspoonsful on a greased cookie sheet.
  12. Bake at 325 degrees Fahrenheit (160 degrees Celsius or Centigrade) for 15-20 minutes.
