Try this pudding recipe for the Passover / Pesach festival. There are many pudding recipes containing a variety of ingredients, but the following pudding recipe is a low-fat version of an apple carrot pudding recipe that will be kind to your waistline.
You can serve this pudding warm or cool with milk at breakfast time, or as a side dish with roasted meat or chicken.
Nonstick cooking spray (see note below)
1/4 cup egg substitute
1/4 cup canola oil (see note below)
1/2 cup plus 1/3 cup slivered almonds, divided
1 large tart apple, peeled and shredded
1 cup shredded carrots
1/2 cup chopped dried figs
1/2 cup diced dried apricots
1/2 cup matzo meal (see note below)
1/3 cup granulated sugar, divided
3 tablespoons fresh lemon juice
2 teaspoons grated lemon zest
1 1/2 teaspoons ground cinnamon
Freshly grated nutmeg
3 extra-large egg whites

Yield: 6 to 8 servings.
Note: If you are unable to find a brand of cooking spray that is kosher for Passover, you can pour the oil of your choice into a spray bottle and use that instead.
Although canola oil is not kosher for Pesach/Passover, you can substitute cottonseed oil or peanut oil (note that peanut oil is healthier than cottonseed oil).
