Try this fruit, vegetables, and nuts salad recipe for the Passover / Pesach festival. Fruit, Vegetable And Nut Salad Recipe (Preparation time: 25 minutes)

Dressing:

1 orange, juice only
1 lime, juice only
1/4 cup lemon juice
2 teaspoons granulated sugar
1/4 cup Passover vegetable oil

Salad:

6 thin stalks asparagus
1 head Boston or bibb lettuce
1 cup sliced strawberries
1/4 cup freshly shelled walnuts

Instructions for the Dressing recipe:

  1. To make dressing, squeeze juice from fruit; add sugar and oil.
  2. Mix well.

Instructions for the Fruit, Vegetable And Nut Salad recipe:

  1. To make salad, trim asparagus stalks and cook in a frying pan in boiling water for 2 minutes (or place in a microwave-safe casserole with 1/4 cup of water, cover with plastic wrap and cook on High (100 per cent power) in a microwave oven for 2 minutes.)
  2. Rinse under cold running water.
  3. Wash lettuce carefully and be sure it is insect-free.
  4. Dry and tear into bite-size pieces.
  5. Place in a clear glass or lucite bowl.
  6. Add chopped asparagus.
  7. Wash, dry and slice strawberries; add to bowl.
  8. Coarsely chop nuts; add to salad.
  9. Add dressing, toss and serve immediately.
  10. Makes 4 servings.

Note: You can cook the asparagus a day before serving it. Simply dry the asparagus after cooking it, then cover and refrigerate it. If you prefer, the dressing can be made several days in advance and stored covered, in the refrigerator.
